Fried Rice Made Special With Meatloaf!

I have seen a fried rice recipe online using Spam but since I don’t have it, I have decided to use meatloaf instead. Also, instead of making my own sauce, I used my Kicap Manis which I bought when I was in Malaysia.

Meatloaf Fried Rice

Ingredients:
Leftover Rice
1 can Meatloaf
3 pcs Eggs
4 tbsp Kecap Manis
Salt
Pepper
Cooking Oil

Fried Rice Recipe

Procedure:
1. Dice meatloaf and cook in a pan with cooking oil. Set aside.
2. Fry scrambled eggs and set aside.
3. Break up the lumpy leftover rice with a back of spoon or fork.
4. In a separate pan, saute sliced garlic.
5. Add rice and toss gently then put a bit of salt and pepper to taste.
6. Add kecap manis and stir.
7. Add spam and egg then break the egg into small pieces.
8. Serve as is or pair with any dish. Also, don’t forget your coffee. Enjoy!

Meatloaf Fried Rice

Cooking tips:
1. You can add carrots, corn, and green onions.
2. I used the beef meatloaf but I prefer the pork variant since it tastes better. You can use any meatloaf depending on your preference.
3. To make your own sauce, you can use soy sauce, sugar, mirin, and pepper.
3. Serve with Sriracha, if desired.
